After 15 years in American white oak ex-bourbon casks, around 30% of the whisky is transferred to Spanish Oloroso sherry casks for three years. When both portions attain the age of 18, they are combined. The Oloroso casks add remarkable vitality, while the American oak balances the sherry’s raisin-like richness.
