One of the most iconic British desserts, the Syllabub is a frothy celebration of citrus. It rose to prominence throughout the 16th and 19th centuries, which was also when gin had a surge and decline due to riots and political scandal.

We at Zymurgorium decided that this was too appropriate to ignore because it is such a valuable cultural asset, therefore we set out to create a gin that fits such a famous treat! Pine, lemon, lime, and toasty oats up front and centre.
