For decades, many people in the highlands have indulged in cranachan during the sweltering summer months.

Rich cream, golden honey, nutritious oats, and, as with most fine puddings, a dash of highland whiskey combine to make a magnificent dish. However, our family always had preserved fall raspberries as the long Winter evenings drew near and the land was covered in snow and ice. We would prepare a warm, celebratory rendition of Cranachan for the winter.
